For 7 years, chef Gilles Roffat has been sublimating the dishes of this atypical restaurant on rue des Bains. Originally from Maine et Loire, Gilles Roffat fell into the pot of culinary pleasures from childhood. A student of the Ecole Hôtelière de Saumur at the age of 15, his teachers knew how to communicate to him their passion for good food. Arrived in Normandy for love, he was for a time the head of the Galerie de Tourgéville, an institution, a place of culture and endless parties, created by Alain Forget. For Gilles, cooking is synonymous with freedom. Freedom to create, to invent dishes wherever you are, to take guests on a journey through their cuisine. Demanding but close to his team, he forms with Philippe Chenaie an accomplice duo, having at heart to make Labels a place of pleasure where traditional dishes are revisited to discover new flavors. As he says so well "Gilles is an alchemist of flavors and he paints his plate like a painter his canvas".

Philippe, too, bathed as a child in the Parisian and Rouen brasseries run by his grandparents and parents. He liked this atmosphere where people savored a good dish in places conducive to beautiful encounters. Seduced both by the atmosphere of the rue des Bains and by the atypical spirit of this restaurant, he bought Les labels 3 years ago with the aim of making it a real place to live. Product quality, inventiveness, friendliness, everything is there to make you want to come back. Their efforts are not in vain, they have indeed just been rewarded with a Toque at Gault et Millau.
