Cider, Calvados and well-kept secrets
Are you wondering how cider or Calvados is made? (in moderation, of course!)
Follow the guide... or rather, follow the producers into their orchards, where the apples are getting a golden brown (even in the Normandy rain, they stay in good shape) before ending up in your glass.
From harvest to fermentation, from the press to the still, the artisans reveal their know-how and some of their manufacturing secrets – except perhaps that of the famous angel's share, this portion of alcohol which evaporates during aging… and which almost makes you believe in a miracle.
